Na ostrvu Spetses, između kamena i soli, gde se more neprestano vraća obali kao da joj nešto šapuće, nalazi se Manastir Živonosni istočnik - sveto mesto koje nosi poseban mir i posebnu težinu molitve. Tamo, gde se sećanje na stradanje i nada u vaskrsenje prepliću, čuva se i jednostavna kuhinja koja ne traži ništa više od onoga što je već dato u prirodi: paradajz, maslinovo ulje i riba iz mora koje okružuje ostrvo. Iz te skromne, ali duboko simbolične manastirske trpeze nastaje jelo koje se sprema polako, kao da i samo učestvuje u tišini manastira.

Sastojci:

Za 4 osobe

- 2 kg zrelog paradajza

- 150 ml maslinovog ulja

- 2 veće glavice crnog luka, isečene na tanke kolutove

- 2 paprike tipa roga, isečene na tanke kolutove

- 2 čena belog luka, isečena na tanke listiće

- 2 kašike kapara, odsoljenih i dobro oceđenih

- veza peršuna, sitno seckanog (listovi)

- kašičica sušenog origana, usitnjenog

- 4 fileta bele ribe po izboru (kirnja, cipal, bakalar…), sa ili bez kostiju, težine oko 200-250 g svaki

- so, sveže mleveni biber

Priprema:

Isecite dva paradajza na srednje, okrugle kriške i ostavite ih sa strane. Preostali paradajz izrendajte na rende.

U širokoj i plitkoj šerpi zagrejte polovinu maslinovog ulja na srednjoj vatri i dinstajte crni luk i paprike dva minuta, dok ne omekšaju. Dodajte beli luk i dinstajte još jedan minut. Ubacite rendani paradajz i kapare, promešajte i kuvajte 10-12 minuta.

Sklonite s vatre, posolite i pobiberite, dodajte peršun i origano i promešajte.

Zagrejte rernu na 180°C.

Uzmite pleh (nerđajući ili vatrostalan) koji može da primi riblje filete lepo raspoređene u jednom sloju. Sipajte u pleh polovinu paradajz-sosa i ravnomerno ga rasporedite. Preko poređajte kriške ribe i prelijte ih preostalim sosom. Preko ribe složite kriške paradajza koje ste ostavili sa strane.

Prelijte preostalim maslinovim uljem, dobro posolite i pobiberite, pa pecite oko 40-50 minuta (u zavisnosti od vrste ribe i debljine kriški), dok riba ne omekša, sos se ne zgusne i kriške paradajza ne porumene.
