Starting with around 5% of calories from animal sources, the study traced the incorporation of animal-based foods up to 35–50%. Around one million years ago, the control of fire enabled the cooking of starchy foods, making them easier to digest and thus providing a more efficient source of glucose. Approximately 100,000 years ago, the use of grinding stones and hearths further facilitated the accessibility of starch from cereal grains. The findings highlight the importance of carbohydrates in sustaining the metabolic demands of the growing human brain. While meat provides essential fats and proteins, it lacks the glucose necessary for optimal brain function. The body can synthesize glucose from other sources, but this process is limited and inefficient. Excessive reliance on protein alone can lead to conditions such as "rabbit starvation," a form of malnutrition caused by consuming too much lean protein without sufficient carbohydrates.
