This realization is prompting restaurants to rethink how they design their menus and approach food preparation. Across the country, this shift is reflected in the increasing availability of protein-rich dishes, sourdough bread, millet-based products, fermented foods, and seasonal produce. Comfort foods are also being reimagined using healthier ingredients and more balanced nutritional profiles. At Bombay Club, for instance, traditional street food items are being adapted to ensure they offer a well-rounded combination of nutrients. A recent addition includes an appam served with avocado, paired with a poached egg and a mango-chilli drizzle, offering a mix of carbohydrates, healthy fats, protein, and fiber all in one dish. This emphasis on nutrition extends beyond restaurants into consumer behavior itself. Young diners are becoming more aware of the nutritional content of their meals, with protein no longer confined to discussions among fitness enthusiasts alone. Vegetarians, too, are seeking out meals that provide sufficient protein, reflecting broader lifestyle changes. With the frequency of eating out rising, individuals are naturally paying closer attention to what they order. Visual appeal remains crucial, particularly for a generation accustomed to discovering food through digital platforms before experiencing it firsthand. “You eat with your eyes first,” Bhandari emphasizes, highlighting the importance of presentation in distinguishing café fare from home-cooked meals. Plating techniques contribute to the overall dining experience, ensuring that meals are both visually appealing and nutritionally sound. As this movement gains momentum, it underscores a fundamental change in how food is perceived and consumed. For Gen Z, the goal is no longer to choose between pleasure and health. Instead, they expect meals that satisfy both cravings and nutritional needs simultaneously.
