To maximize hydration, cabbage should be eaten raw, such as in salads or as a topping for tacos and avocado toast. Mushrooms, while containing only about 65 milliliters of water per cup, are low in calories and rich in plant-based proteins, vitamins, minerals, and antioxidants. They support immune function, heart health, digestion, and may aid in protecting against inflammation, diabetes, obesity, and aging. To retain moisture, mushrooms should be consumed raw, marinated, or gently cooked at low temperatures. Strawberries, one cup of which contains over 155 milliliters of water, 3 grams of fiber, and the entire daily dose of vitamin C, are packed with anti-inflammatory antioxidants. These have been associated with protection against cancer, heart disease, type 2 diabetes, obesity, and Alzheimer’s disease. Peaches, though naturally sweet, contain relatively little sugar, around 9 grams per cup. With a water content of 91 percent, they contribute to heart and digestive health, regulate blood sugar, and assist in weight management thanks to their antioxidant profile. Watermelon, comprising 90 percent water and abundant antioxidants, is noted for its orange color due to beta-carotene, a precursor to vitamin A. This nutrient supports immunity, vision, and the proper functioning of the heart and lungs. One cup of watermelon provides more than the recommended daily intake of vitamin A for adults. Kale, despite containing 90 percent water, offers less total liquid per serving due to its light texture. However, as a member of the cruciferous family, it is highly nutritious. Two cups of kale contain fewer than 20 calories and deliver a wide range of nutrients including antioxidants, vitamins A, C, and K, folates, calcium, magnesium, fiber, and prebiotics.
