In mid-2023, it was acquired by Craveable Brands, a fast-food franchise group that also owns Oporto, Red Rooster, and the Western Australian chain Chicken Treat. This acquisition marked a turning point for the brand, shifting it from a family-run operation to a larger corporate entity. The transition was led by Scott Bradley, a former executive at Grill’d, who now serves as the company’s chief executive. Bradley’s mission is to enhance operational efficiency and consistency while preserving the core values that made Chargrill Charlie’s a local favorite. Under Bradley’s leadership, the entire operation has undergone a thorough review aimed at improving consistency and efficiency. While food preparation continues to occur in-store, a decision Bradley insists on maintaining, he acknowledges the financial implications of this choice, including higher wage costs. His focus is on streamlining operations, ensuring that orders are managed precisely to minimize waste without compromising the quality of the food. Bradley refers to this initiative as a “menu optimisation project,” highlighting the comprehensive nature of the changes, which include evaluating everything from equipment and supply chains to customer service protocols. Despite these changes, Bradley has made it clear that certain aspects of the original model must remain intact. He has ruled out moving toward a centralized kitchen setup, emphasizing that the current system requires careful monitoring to maintain the high standards of product quality that have defined Chargrill Charlie’s for decades. Each location retains a degree of autonomy, allowing for localized touches that reflect the unique character of each community. Approximately 80 percent of the menu items are standardized across the chain, while the remaining 20 percent allows for flexibility, such as the tradition of offering free ice creams on Thursdays at the Coogee branch. Some locations, particularly those with franchisees or staff from Indian or Nepalese backgrounds, may also incorporate regional specialties like curries into their offerings.
