Their study reveals that overfermentation of cocoa beans leads to the production of specific compounds such as short-chain carboxylic acids, 2-methoxyphenol, and 4-ethylphenol, which contribute to smoky, leathery, and cheesy odors. This finding challenges previous assumptions that such flavors were primarily due to external smoke exposure. The research involved analyzing cocoa samples from different fermentation stages and fieldwork in Nicaragua and Costa Rica. The study highlights that while overfermented cocoa contains similar levels of certain phenolic compounds to those found in smoke-contaminated cocoa, the chemical profiles differ enough to potentially allow for more accurate identification of the flavor’s origin.
