Not every meal has the same impact: Researchers reveal the hidden footprint of our food

Researchers from Leiden University, in collaboration with Oxford University and Vienna University of Economics and Business, have analyzed the environmental impact of different diets across 165 countries. They developed a model called MATILDA to assess the climate, land, and water footprints of various population groups based on factors like age, gender, education, and urban/rural residence. The study found that young, highly educated men in urban areas have the highest average climate impact from their diets, while rural women have the lowest. Plant-based diets were associated with lower environmental footprints and better dietary quality. The research highlights significant variations in dietary impact within countries and suggests that promoting plant-rich diets could offer both environmental and health benefits.
